    You know those fancy burger buns you get from fancy "burger bars"? The brioche kind of burger bun.. This is that bun, but better, and really easy to make. This is a combination between a brioche and Japanese milk bread dough, that to me creates the ultimate burger bun. It's light and airy, glossy, and has a nice fluffy inside that gets a great toast and absorbs juices without going soggy. Plus these buns can be used for all sorts of things other than burgers, like the most amazing breakfast sandwich, or a fried chicken sandwich. It's all good, and just in time for that summer grilling.

    Ingredients you'll need:
    Tangzhong:
    2 tablespoons (20g) bread flour
    2 tablespoons (27g) water
    4 tablespoons (60g) whole milk
    Dough:
    1/2 cup(120g) whole milk @ 95f (30c)
    1 tablespoons (9g) instant yeast
    2.5 cups (320g) Bread flour
    1 teaspoon (7g) fine sea salt
    2.5 tablespoons (35g) granulated sugar
    1 whole egg
    1 egg yolk
    3 tablespoons (42g) unsalted butter, softened
    Egg wash:
    1 whole egg
    splash of whole milk

I just made this recipe. I mixed the dough by hand and it was really frustating af first. It was very sticky! But after the butter involved it became smooth and more manageable. After first proofing it was great and easy to shape. Final products were AWESOME. I'm so happy the buns very magnificent! Thanks to Joshua Weissman, your recipe and method for this bun is spectacular!

Tried this today. Texture: AMAZING, but a little too sweet of a bun for my liking. It reminded me of thoese sweet buns you eat by theirselves at fancy restuarant. Might cut down on the sugar on my next try.

Great fundamentals - but the moisture to flour content is too much. I had to amend the dough to make it decently workable by adding about 4 tbsp more of flour.. And the crumb ended up a bit more dense than described. BUT it was still fantastic! Just that I think you need to reconfirm the ingredients. In the video you mentioned 6 tbsp of milk for the tangzhong, but in the written recipe, you wrote 4. I stuck with 4 (thankfully, or else it would have been too wet and difficult to knead). I love how it ended up so I'm gonna use your recipe and amend it by increasing the flour by 4 tbsp. I also proofed it initially for 1.5 hrs instead of 0.5, and then 0.5 hrs after I formed the balls. Otherwise everything else remained the same and it's incredibly delicious, even eaten on its own! Thanks Joshua!

this was my second ever burger bun and quite possibly the 100th bread recipe i’ve tried. although my oven is very old and not good with keeping the temperature high, these turned out awesome. i couldn’t believe my eyes when i was shaping the dough, it was extremely soft and delicate even after an hour of rising. the finished product was even better. it’s so soft but never crumbly. just the burger bun you’d get from the fanciest burger place. i followed the metric measurements precisely and as i’m writing i fail to find words to describe my love and affection towards this recipe. thank you so much like fr thank you SO much

Love the videos, came here after seeing a YouTube ad on facebook (they didn't mention your channel in the original post, took a few commentors and 2 hours for them to finally link to this video.) and I like what you're doing. Absolutely love the Honey Butter chicken biscuit video. Personally on this, I wouldn't have cooked the patties quite as long, don't need to have blood left over, but I like a little more pink in the meat. Love your videos man, keep up the great work!

Josh is right.... We made these and it was truly one of the best if not THE best burger I've ever eaten. The un makes all the difference. It hold up to a very juicy chuck roast home ground burger without being too tough or too soft. The bun lasts through the whole eating experience. Equally good as day-old. Great instructions! Great recipe.

Finally made these yesterday and they are amazing! I did sprinkle them with sesame seeds because that's what we like, but they would have been delicious even without them. The flavor and texture of these rolls are to die for! Try using aluminum foil to cover but making sure it’s not touching the dough. Create a peak when covering. Idk how to explain but essentially it’s like using the baking sheet but you could give it more height so that it won’t touch the top to flatten

this is my third time attempting his recipes, they always turn out IMMACULATE. im still waiting for my dough to proof. update: agin, they came out perfect. exactly like his. also, my dough was super tuff and sticky when it was kneading on the mixer, but a few more minutes of kneading made it came out perfect!!
