    You know those fancy burger buns you get from fancy "burger bars"? The brioche kind of burger bun.. This is that bun, but better, and really easy to make. This is a combination between a brioche and Japanese milk bread dough, that to me creates the ultimate burger bun. It's light and airy, glossy, and has a nice fluffy inside that gets a great toast and absorbs juices without going soggy. Plus these buns can be used for all sorts of things other than burgers, like the most amazing breakfast sandwich, or a fried chicken sandwich. It's all good, and just in time for that summer grilling.

    Ingredients you'll need:
    Tangzhong:
    2 tablespoons (20g) bread flour
    2 tablespoons (27g) water
    4 tablespoons (60g) whole milk
    Dough:
    1/2 cup(120g) whole milk @ 95f (30c)
    1 tablespoons (9g) instant yeast
    2.5 cups (320g) Bread flour
    1 teaspoon (7g) fine sea salt
    2.5 tablespoons (35g) granulated sugar
    1 whole egg
    1 egg yolk
    3 tablespoons (42g) unsalted butter, softened
    Egg wash:
    1 whole egg
    splash of whole milk

How to get really tender burgers or meatballs, without frying. Preheat oven. Form patties or balls. Meatballs can go straight into oven, and bake until brown all over. Sear burger patties in a frying pan for a few seconds on each side, then finish baking in oven. This is also how you make Salisbury steak except add some breadcrumbs, no need to pan sear, cook half way then complete cooking by adding the oblong patties to gravy and simmer. Believe it or not, the meat will brown perfectly in the oven. No stirring, no scorching, and very tender, no muss no fuss. This just occured to me one day after 45 years of doing it wrong.

Paula Fuentes you can mix and knead it by hand! It wasn't hard to do. Just cut the butter into 4-5 pieces and knead each piece in one at a time

I used a hand mixer, it was a fucking pain to get it to the right texture takes about 15 min and a strong arm but it works :D
