    The Most Amazing Chocolate Cake is here. I call this my Matilda Cake because I swear it’s just as good as the cake that Bruce Bogtrotter ate in Matilda. Moist, chocolaty perfection. This is the chocolate cake you’ve been dreaming of!

    The Most Amazing Chocolate Cake
    BUTTERMILK SUBSTITUTE: thestayathomechef.com/buttermilk-substitute/
    Prep Time: 10 minutes
    Ready In: 45 minutes
    Yield: 3 9-inch rounds
    Ingredients
    butter and flour for coating and dusting the cake pan
    3 cups all-purpose flour
    3 cups granulated sugar
    1½ cups unsweetened cocoa powder
    1 tablespoon baking soda
    1½ teaspoons baking powder
    1½ teaspoons salt
    4 large eggs
    1½ cups buttermilk
    1½ cups warm water
    ½ cup vegetable oil
    2 teaspoons vanilla extract
    Instructions
    Preheat oven to 350 degrees.
    Butter three 9-inch cake rounds. Dust with flour and tap out the excess. (see cooking lesson below)
    Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
    Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
    Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly.
    Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean).
    Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.
    Frost with your favorite frosting and enjoy!
    Notes
    The better quality cocoa powder you use the better the cake will taste.
    Chocolate Cream Cheese Buttercream Frosting
    Prep Time: 10 minutes
    Yield: enough frosting for a 3 tiered cake
    Ingredients
    1½ cups butter, softened
    8 oz cream cheese, softened
    1½ cups unsweetened cocoa powder
    3 teaspoons vanilla extract
    7-8 cups powdered sugar
    about ¼ cup milk (as needed)
    Instructions
    In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results
    Add in cocoa powder and vanilla extract. Beat until combined.
    Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated.
    Notes
    In the photos above, an extra dark cocoa powder was used in the frosting. Extra dark cocoa will result in a much darker, almost black frosting.


    METRIC MEASUREMENTS
    Ingredients

    3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
    4. Divide batter among the three pans.

Sana Aslam yes half of all ingredients but of course when baking only use one ☝🏽 tray I use a 9x13 and baked for. 30 min make sure u dont over bake otherwise your cake will be dry all ovens work different so u my want to see at minute 25 good luck 🍀

Hi, thank you for sharing the recipe! I was gonna make the cake and the frosting for my son's birthday but he told me that he didn't want the chocolate cake. He wanted the sponge cake with chocolate filling and Swiss meringue frosting. So I just made your frosting (crossing my fingers that he wouldn't taste the cream cheese as he doesn't like it). I followed the recipe to a T except that I used only 51/2 cup of sugar when I tasted it was already too sweet for my liking. However, my frosting is very liquidy. I only used 3 TBSP of milk because you said to add it little by little. So, that little by little was too much! I should have put 1 TBSP at a time! I tried to "correct" it by adding 1/4 C more of cacao powder and 1/2 C powdered sugar. It did help to thicken it up a bit. I didn't dare to add more cacao powder nor sugar. I just refrigerate it while praying that it will come out with the correct thickness. What would you do should this happen to you?

@The Stay At Home Chef Sadly, your recipe didn't work for us then cos even my son who likes sweet said that it was too sweet (51/2 C) and didn't finish his portion! Is it possible that the French sugar is too sweet and the cacao powder (Nestle's) is not as bitter vs American sugar? Next time I try, I'll keep this in mind....

Unfortunately the recipe is written to require more powdered sugar to have a non-liquid frosting so the solution would have been to follow the recipe as written. Milk should be added slowly if necessary to thin out the frosting.

I almost always test using Hershey’s cocoa powder because it is the most widely available. For personal use I’ve also been know of use high end expensive cocoa powders or artisanal ones from chocolatiers.

I’ve never used Cadbury cocoa powder so I can’t tell you if it is good or bad, but if you felt the cocoa powder was too bitter, that’s an issue with your cocoa powder. There also may be somewhere you went wrong with the recipe without realizing it. I know you think you followed it, but in my experience it turns out that people just don’t realize when they messed up and then blame the recipe developer. I wouldn’t publish a recipe if it were bad or didn’t work. This is my livelihood so that’d be super dumb of me.

If you are dealing with celsius, then yes. For Fahrenheit it would be 350 degrees.

Hello.. I have been trying your recipe for almost 5 times using metric (grams) I dont know where is the mistake is...the batter is slightly watery compared to the video and after it baked it taste unpleasant and dry. Like almost tasteless..no sugar. I hope you can help me out. Thanks in advance 😊

Jr. Jeon no, buttermilk makes it a lot more moist you can add 1 tablespoon vinegar to a cup of milk wait for 5 minutes and you’re good to go 😊
